1 1/2 lb short ribs
1 quart tomato puree
1 cup balsamic vinegar and hoisin sauce
1/2 cup sherry vinegar
1/4 cup soy sauce
1 tbsp chipotle hot sauce, chopped shallots and olive oil
Salt, ground white and black pepper
4 oz caramelized pearl onions
2 oz brown sugar

Sear ribs on both sides in oil. Place in a roasting pan. Cover with all ingredients and roast in the oven at 300 for 5-6 hours or until fork tender. Serves 4
