1/3 cup olive oil
2 cloves garlic, chopped
Grated lemon rind
Juice of 1 lemon
2 tbsp red wine vinegar
1 tsp dried oregano and salt
1/4 tsp black pepper
2 lb boneless sirloin, cut into 2 inch pieces
2 sweet green pepper, cut into 1 inch pieces
2 red onions, cut into 3/4 inch wedges
1 (10 oz) pkg white mushrooms
2 boxes rice pilaf mix, prepared as package directed
In a small bowl, whisk together first 8 ingredients. Pour half into a large plastic bag and add beef. Seal and refrigerate 1-2 hours.
Divide steak and vegetables in 6 equal portions and thread onto large skewers. Heat broiler. Place skewers on a large broiler pan rack and brush with some remaining marinade. Broil 5 minutes. Turn over; brush with marinade and broil 5 minutes. Serve with rice. Serves 6
