6 chicken breast trimmed and pounded
Breading flour (recipe follows )
2 cups milk
Juice of lemon
Oil for frying

Pecan Sage Butter
1 cup butter
1/2 to 1 cup chopped pecans, roasted
2 tbsp chopped sage
1 tbsp honey and brown sugar
1/2 tsp cayenne pepper, salt and pepper,

Soften butter in a mixer or by hand, add the rest of the ingredients and mix to combine. Place the butter mixture on a piece of plastic wrap or parchment paper and roll into a log shape and

Breading flour:
2 cups flour
1 tbsp smoked paprika, onion powder, garlic powder and chili powder
1 tsp ground coriander, salt, ground mustard and ground thyme
1/4 tsp pepper and cayenne pepper
2 tsp poultry seasoning

Mix all dry ingredients together and reserve for breading.

Mix milk with the juice of half a lemon. Preheat oil to 350. Dip the chicken breast into the flour mixture, then the milk, and then back into the flour mixture.

When the oil is up to temp. place the chicken in and fry 8 minutes if the chicken is submerged on oil, 4 -5 minute per side if only half way submerged. cook until it reaches an internal temperature or 165 degrees. Top with a slice of the sage pecan butter and serve with mashed potatoes and a vegetable of your liking.
