1/2 lb deli thin sliced ham
1/2 tub deli thin sliced oven roasted turkey
1 whole loaf of bread
3 tbsp olive oil, divided
Salt and freshly ground pepper
1/2 cup prepared pesto sauce, divided
8 slices provolone cheese, divided
1 jar roasted red peppers, drained
1/2 cup of pine nuts, toasted
Preheat oven to 350. Cut from the top of the loaf a bread creating a large opening. Hollow out the bread on the inside leaving a 1/4 inch covering all sides.
Brush the inside of the hollowed out bread with olive oil. Sprinkle with salt and pepper and place in the oven for 5 minutes. Remove from the oven and allow to cool until cool enough to handle.
Working in layers, start with 1/4 cup pesto, half of the cheese, pine nuts, ham, roasted red peppers, turkey, remaining half cup pesto and remaining cheese. Drizzle remaining 1 tablespoon of olive oil over top. Replace bread piece that was cut from the top and wrap the entire loaf in two layers of heavy-duty foil. Bake for 25 minutes. Cut and serve warm. Serves: 6
Note: Prebake for 20 minutes and finish off on the grill at the game for an additional 10 minutes.
