1/4 cup butter, softened
1 (8 oz) cream cheese, softened
3/4 cup sugar
1/2 cup cream of coconut
1/2 tsp vanilla or almond extract
1 3/4 cup heavy whipping cream
1/2 cup sweetened coconut flakes
1/2 cup strawberry jam
toasted coconut to garnish

In a large mixing bowl, beat butter and cream cheese at medium speed until creamy. Add sugar, cream of coconut, and vanilla or almond extract, beat well. With mixer running, gradually add whipping cream, beating until stiff peaks form. Gently fold in coconut flakes. Cover and chill until serving time.

In a small saucepan, melt strawberry jam over low heat on stovetop. Strain if desired. Before serving, spoon mousse into glasses. Top with strawberry sauce and toasted coconut. Serves 6-8
