6 boneless, skinless chicken breasts, pounded then
6 thin sliced boiled ham or prosciutto
3 slices mozzarella cheese, halved
2 medium tomatoes, seeded and chopped
3/4 tsp sage and thyme
1 cup dried bread crumbs
4 tbsp grated parmesan cheese
2 tsp snipped parsley
6 tbsp butter, melted
Prepared hollandaise sauce
Place ham slice and half cheese slice on chicken. Top with tomatoes and dash of seasoning. Roll up jelly-roll style and secure with toothpicks. Repeat with each breast.
Combine bread crumbs, cheese and parsley. Dip roll-ups in butter; then roll in crumbs. Place in shallow baking pan; bake at 350 for 45 minutes. Top with hollandaise sauce.
