2 boneless, skinless chicken breasts, pounded to 1/4 inch thickness
4 slices Monterey Jack cheese
4 tbsp fine dry bread crumbs
8 tsp grated parmesan cheese
3 tsp snipped fresh parsley
4 tbsp butter, melted
5 cups cooked noodles
1 1/2 cups pizza sauce

Place cheese slices on chicken, cutting to fit with 1/4 inch of edges. Fold in sides; roll jelly-roll fashion, pressing to seal.

In a bowl, combine crumbs, cheese and parsley. Dip chicken rolls in butter and then roll in crumb mixture in a casserole dish. Bake at 350 until chicken is browned, turning about 15 minutes to brown on all sides. Allow to rest for about 5 minutes. Combine noodles and pizza sauce. Slice chicken rolls into slices and serve over noodles.
