MAPLE PECAN CORNBREAD WITH MAPLE BUTTER

Cornbread
1 cup cornmeal
1 cup flour
1 tsp baking powder and baking soda
1/2 tsp salt
3 large eggs
3 tbsp butter, softened
2 tbsp firmly packed brown sugar
1/2 cup buttermilk
1/4 cup maple syrup
1 tsp maple flavoring
3/4 cup chopped pecans, toasted

Maple Butter
1/2 cup butter, softened
1 tbsp maple syrup
1 tsp maple flavoring

Heat oven to 350. Combine dry ingredients in small bowl. Combine eggs, 3 tbsp butter and brown sugar in large mixer bowl. Beat at medium speed until well mixed (1 to 2 minutes). Add buttermilk, 1/4 cup maple syrup and 1 tsp maple flavoring.

Continue beating until well mixed (2 to 3 minutes). Reduce speed to low; add flour mixture. Beat, scraping bowl often, until well mixed (1 to 2 minutes). Stir in pecans by hand. Spoon into greased 8-inch square baking pan. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.

Meanwhile, combine all maple butter ingredients in small mixer bowl. Beat at medium speed until fluffy (2 to 3 minutes). Serve with warm cornbread.
