2 (14 1/2 oz) cans chicken broth
1 cup water
1 EACH medium carrot and celery, chopped
1 cup chopped fresh mushrooms
3/4 cup long-grain rice
1 tsp poultry seasoning, dried basil, crushed
1/4 tsp pepper
2 cups chopped, cooked chicken
2 tbsp parsley

Combine broth and next 4 ingredients. Bring to a boil. Reduce heat. Stir in uncooked rice and seasonings. Cover; simmer for 15 minutes or until rice is tender. Stir in chicken and heat through. Stir in parsley. Taste for additional seasoning. Serves 4
