4 whole boneless, skinless chicken breasts, split in half lengthwise
2 cups uncooked quick cooking white or brown long grain rice
1 rib celery, coarsely chopped
1 clove garlic, peeked
1/2 oz fresh mushrooms, thinly sliced
1/2 cup coarsely chopped onions
1/4 cup coarsely chopped green, red bell pepper and yellow bell peppers
1 can cream of mushrooms soup
1 cup chicken broth
3/4 cup dry sherry, white wine or water
1 to 11/2 tbsp minced parsley
1/2 to 1 tsp Worcestershire sauce
4-6 drops hot pepper sauce
Seasoned salt and pepper
Season chicken with salt and pepper. Spread rice in a baking dish and top with chopped vegetables. Combine soup and next 6 ingredients; blending well. Spoon half of mixture over rice and vegetables. Season with salt and pepper. Arrange chicken over mixture and top with remaining sauce. Bake, loosely covered with foil, and bake at 350 for 1 hour. Chicken for doneness of chicken and rice. Uncover and continue to bake for 20-25 minutes or until all is fork tender. Serves 4-6
