1/2 cup finely chopped onion and celery
1 cup sliced fresh mushrooms
1/4 cup butter
1/3 cup flour
2 cups chicken broth
1 cup whipping cream
2 1/2 cups cooked, diced chicken
1/4 cup sliced stuffed olives
2 tbsp minced parsley
1/2 tsp salt
1/4 tsp pepper
Biscuits
2 tbsp shortening
1 cup flour
1/2 cup buttermilk
Combine vegetables in butter in a large saucepan; saute until tender. Slowly stir in flour, stirring constantly for 1 minute. Gradually stir in broth and cream. Bring to a boil, stirring constantly until thickened. Stir in next 5 ingredients and pour mixture into a greased 1 1/2 quart baking dish.
Cut shortening into flour until mixture resembles coarse crumbs. Add buttermilk and stir with a fork until dough leaves sides of bowl. Turn dough out onto lightly floured board and knead gently 5-6 times. Roll out to 1/2 inch thickness. Cut into rounds with 2 inch cutter and place on top to casserole mixture. Bake at 400 for 25 to 30 minutes or until casserole bubbles and biscuits are golden brown. Cool about 10 minutes before serving. Serves 4-6
