4 boneless, skinless chicken breasts
2 limes, juiced
2 tsp ground cumin
2 tbsp minced fresh cilantro
1 tsp crushed red pepper flakes
4 tbsp olive oil, divided
4 large onions, sliced and separated into rings
6 tbsp brown sugar
1/4 cup cider vinegar
4 (1 inch) thick slices Texas toast, both sides toasted
Tomato wedges
Dill pickle spears

In a medium bowl, mix together lime juice and next 3 ingredients and 2 tbsp olive oil. Add chicken, turn to coat well; allow to marinade 15 minutes.

In a large skillet, place remaining oil over medium heat. Add onions and cook about 5 minutes, stirring. Add brown sugar and vinegar and continue to cook about 5 more minutes until caramelized. Remove from pan and keep warm.

To the frying pan, add the chicken and cook about 6 minutes on each side. Place a slice of toast on 4 plates and top with chicken, onions and garnish with tomato and pickle. Serves 4
