3 cups sugar
1 tbsp plus 2 tsp baking soda
1 can fruit cocktail, undrained
1 (15 oz) box bran flakes cereal
1 cup vegetable oil
1 tbsp plus 1 tsp cinnamon
5 cups flour
4 large eggs
2 tsp salt
1 quart buttermilk
Combine all ingredients in a large bowl; beat at medium speed with an electric mixer for 2 minutes. Fill muffin pans 2/3 full. Bake in 400-degree oven for 16 minutes. Note: Batter may be covered tightly and stored in refrigerator up to 3 weeks. Do not stir before using.
