1 1/2 cups fresh blueberries
2 cups sifted flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup milk
Night before: Sift together dry ingredients; set aside. Beat together next 3 ingredients until light and fluffy, scraping sides occasionally. Beat for 4 minutes. On low speed, beat in alternately the flour mixture and milk (beginning and ending with the flour). Beat until smooth. Fold in blueberries just to combine.
Lightly grease a muffin tin and fill each 2/3rds full. Refrigerate overnight. Next day: Preheat oven to 350. Bake for 25 minutes. Remove to wire rack. Let cool or serve warm.
