8 oz frozen cooked shrimp, thawed
1/4 cup light mayonnaise
1 tbsp pesto sauce
1 pizza crust
vegetable cooking spray
1/2 tsp Italian seasoning, divided
1/2 cup + 1 cup shredded Italian cheese blend
1/4 cup roasted red peppers
6 oz frozen imitation seafood (or crab meat)
1 cup sliced baby portabella mushrooms
4 fresh basil leaves
Preheat oven 450. In mixing bowl, place mayonnaise and pesto. Mix well. Place pizza crust on baking sheet and spray crust with vegetable cooking spray.
Spread mayonnaise mixture evenly over crust. Sprinkle with 1/4 tsp Italian seasoning and 1/2 cup Italian cheese blend. Dice peppers. Cut crab meat into bite-size pieces. Drain shrimp; pat to dry with paper towel. Distribute shrimp, crab meat, peppers and mushrooms evenly over pizza.
Top with remaining Italian cheese and Italian seasoning. Place pizza in oven and bake for 20 minutes. Slice basil leaves into very thin strips and set aside. Remove from oven. Sprinkle with fresh basil and let sit for 5 minutes. Slice and serve.
