1 cup rosemary-red wine vinegar
2 cups olive oil
1 clove garlic, minced
1/2 tsp salt
1/4 tsp ground white pepper
2 tsp Dijon mustard
2 (3 1/2 z) pkg shiitake mushrooms, sliced
9 cups mixed salad greens
1 (4 oz) pkg crumbled bleu cheese

Combine first 6 ingredients in a jar and shake to combine. Combine with mushrooms in a large bowl; cover and chill at least 3 hours. Combine salad greens and crumbled blue cheese in a large bowl; add mushrooms and enough vinegar mixture to lightly coat salad greens, reserving remaining mixture for another use. Toss gently and serve. Serves 6
