Vinaigrette:
1 cup cranberry juice
2 tbsp fresh cranberries
2 tbsp cranberries
1/4 cup red wine vinegar
1 tbsp minced red onion
1/3 cup of canola oil
pinch of black pepper

Vinaigrette: Combine first five ingredients in pour into a blender, with the blender slowly running incorporate the canola oil and continue to blend for one minute. Season with salt and pepper and reserve.

Salad Ingredients:
6 cups field mix
3 tbsp walnut pieces
4 tbsp re-hydrated dry cherries
1/2 cup diced peeled pears
4 tbsp crumbled gorgonzola cheese
8 tbsp cranberry vinaigrette

Salad: Place the field mix in a large bowl and toss with 1/4 cup of the cranberry vinaigrette. Arrange the greens on two large plates (served as lunch entree) or four small plates as side salads. Top with pears, gorgonzola cheese, walnuts and dry cherries. Serve. Serves 2-4
