1 lb spinach, washed with stem removed and broken into small pieces
6 scallions, chopped
6 slices bacon, cooked and diced
1/4 cup walnuts, toasted and coarsely chopped
Pepper, to taste
Dressing
1 clove garlic, halved
1/2 cup olive oil
1/2 tsp salt
3 tbsp lemon juice
1/4 cup red wine vinegar
Pat spinach dry with a paper towel and place into a salad bowl along with remaining salad ingredients. Toss lightly and refrigerate for 1 hour.
In a jar, add oil and garlic; refrigerate for 1 hour. Remove garlic from oil and add remaining dressing ingredients. Whisk until combined. Pour dressing over spinach and toss. Sprinkle with pepper before serving.
