4 cups hickory barbecue sauce
1/2 cup white vinegar
4 tbsp pickling spices
2 quart water
4 boneless, skinless chicken breasts
1 recipe for Hot bacon dressing
4 cups fresh spinach, washed and diced
Garnish: Sliced green onion, Diced red peppers, Toasted pecan pieces, Grated egg

Combine first 4 ingredients. Mix well and set aside.

Cut chicken into strips and saute in skillet until cooked through. Marinate chicken strips in reserved sauce mixture in covered container in refrigerator for 24 hours.

Prepare hot bacon dressing. Place spinach in a large serving bowl. Top with chicken, then garnishes and dressing. Serve immediately. Serves 2-4
