1 cup boiling water
1 pkg lemon jello
1 pkg graham crackers, crumbled
4 tbsp packed brown sugar
4 tbsp butter
1 (8 oz) pkg cream cheese, room temperature
1 tsp vanilla extract
1 cup sugar
1 can evaporated milk
Dissolve jello in boiling water and chill until it starts to congeal; then whip. Place graham cracker crumbs into a 13x9 inch baking pan. Mix brown sugar in with crumbs. Melt butter and mix thoroughly with cracker mixture, saving some crumbs for topping and pressing remaining into pan for crust.
Whip cream cheese with vanilla and sugar until smooth. Add jello to cheese mixture and blend thoroughly. Whip evaporated milk until it forms stiff peaks. Add cheese mixture to whipped milk and blend thoroughly. Pour entire mixture over crumb crust in pan. Sprinkle with remaining crumbs on top. Chill until ready to serve.
