1 lb bulk pork sausage
1/2 cup chopped onion
1-1/2 cups shredded cheddar cheese, divided
1 (10 oz) pkg frozen chopped spinach, thawed and well drained
1 (4-1/2 oz) jar sliced mushrooms, drained
12 eggs
2 cups heavy cream
1/4 tsp ground nutmeg

In a skillet, cook sausage and onion until the sausage is browned and the onion is tender; drain. Remove from the heat; stir in 1 cup cheese, spinach and mushrooms. Transfer to a greased 13-in. x 9-in. baking dish. In a bowl beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture. Bake, uncovered, at 350 or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand 5 minutes before cutting. Serves 12
