CHEESE STUFFED SQUASH

6 pattypan squash
1 small onion, minced
2 tbsp butter
1/2 tsp salt
1/4 tsp pepper
1 cup fine dry bread crumbs
1/2 cup shredded cheddar cheese
3 slices bacon, partially cooked

Cut off stems of squash and cook in about 1 inch boiling, salted water, covered, until barely tender, about 8 minutes. Cool. Cut out a circle on top of each squash and scoop out pulp, leaving shells about 1/4 inch thick.

In a skillet, cook onion in butter until softened. Add squash pulp, salt, pepper and crumbs. Mix well and spoon into squash shells. Arrange in a shallow baking dish and top with cheese. Cut bacon strips in half and place a piece on each squash. Bake at 400 for 15 minutes or until browned. Serves 6
