1 lb tomatoes, seeded and diced
1/4 tsp salt plus more to taste
1/2 bunch of green onions, whites and greens chopped
1/4 cup diced sweet yellow onion (Mayan, Vidalia, Texas jumbo) or red onion, diced
1 small handful of cilantro, chopped
1-2 jalapenos, seeded and diced
1/2 red bell pepper, seeded and diced
1/2 yellow or orange bell pepper, seeded and diced
Juice of 1/2 of lime
1 large clove garlic, minced finely
1 tsp cumin

Place strainer or colander over large bowl. Place freshly diced tomatoes in strainer and add 1/4 tsp salt. Stir. Let juices drain for 10-15 minutes. Discard juice. Place tomatoes in bowl. Add all other ingredients, stirring to incorporate. Let set for at least 30 minutes before serving with tortilla chips. Salt to taste, if needed.
