1 lb vermicelli pasta
2 tbsp olive oil
1 tsp minced garlic
13 plum tomatoes, chopped and seeded
1 tbsp salt, chopped fresh parsley and Cajun seasoning
1/2 cup shredded mozzarella cheese and grated parmesan cheese

Cook pasta until al dente; drain. While pasta water is boiling, in a large skillet, briefly sauté garlic in oil. Stir in tomatoes and their juice with salt. When tomatoes are bubbly, mash slightly with a fork. Stir in parsley, reduce heat, and simmer 5 minutes more. Toss hot pasta with tomato sauce, seasoning and cheeses. Serves 4
