2 (6 oz) jars marinated artichoke hearts
1 small onion, chopped
1 clove garlic, minced
4 eggs, beaten
1/4 cup bread crumbs
1/4 tsp red pepper sauce
1/2 tsp dried oregano
2 cups grated cheddar cheese
Salt and pepper, to taste
Preheat oven to 325. Drain liquid from 1 jar of artichokes into skillet. Saute the onion and garlic in artichoke liquid until soft. Drain liquid from remaining jar of artichokes and discard. Chop all artichokes.
Combine eggs, bread crumbs, pepper sauce and oregano. Stir in onion mixture, artichokes, cheese, salt and pepper. Pour into a greased 13x9 inch baking dish. Bake for 30-35 minutes. Cool. Cut into small squares. Serves 8-10
