4 (6 inch) corn tortillas
4 1/2 oz can refried bean dip
1 cup cooked chicken strips
1/4 cup sliced green onions
2 tbsp sliced ripe olives
2 tbsp sliced pimiento
1 cup shredded Monterey jack cheese
Optional garnishes: Guacamole, additional cheese, chopped green onion or sour cream, if desired
Heat oven to 400. Place tortillas on ungreased cookie sheet. Bake at 400 for 5-7 minutes or until crisp but not brown. Spread 1/4 bean dip over each tortilla. Top each with 1/4 chicken, onions, olives, pimiento and cheese. Bake for 10-15 minutes or until cheese is melted. Garnish.
