1 lb small shrimp (40-50), shelled
3 tbsp extra virgin olive oil
8 to 10 large garlic cloves, peeled and finely minced
2 dried red chili peppers, each broken into 3 pieces
1/2 tsp sweet paprika
3 tbsp finely minced parsley
About 1/2 hour before cooking, season shrimp well with salt. Place shrimp on paper towels, cover with paper towels, and let rest.
When ready to cook, place olive oil in a large saute pan over medium-high heat. Add garlic and chili pepper. Sauté 2 minutes; do not let garlic brown. Dry shrimp well. Add to hot oil and turn quickly to coat with oil. Cook, tossing, until shrimp are just done-no more than 2 minutes. As they finish cooking, sprinkle with paprika and parsley; stir to blend well. Remove from heat; add salt to taste. Divide among four appetizer plates and serve immediately with good bread for sopping up the oil.
