ITALIAN STYLE CHICKEN IN WINE

2 tbsp olive oil
3 lbs chicken pieces
1/2 cup shallots, minced
2 cloves garlic, halved
1 (28 oz) can diced Italian style tomatoes
1 cup Zinfandel wine
1/2 tsp salt
1/4 tsp pepper and red pepper flakes
1/3 cup minced parsley

Heat oil in a skillet. Brown chicken pieces until golden. Place chicken in a casserole dish. In the same skillet, saute shallots and garlic for 3 minutes, adding more if necessary. Stir in tomatoes with liquid, wine and seasonings. Simmer for 10 minutes and pour over chicken. Bake at 350 for 1 hour. Serve over egg noodles. Serves 4-6
