1 1/2 lbs chicken cultets
1 green pepper, chopped
2 medium zucchini, cut into cubes
2 clove garlic, minced
8 oz spaghetti, cooked al dente, drained, tossed with 1 tbsp olive oil
1/2 cup chopped onion
2 (14 oz) jars marinara sauce
1/2 tsp each dried basil, fennel seeds, thyme and marjoram
1/4 tsp salt and red pepper flakes
2 cups coarsely shredded mozzarella cheese
1/4 cup grated parmesan cheese
Preheat oven to 350. Heat 2 tbsp oil n skillet and brown chicken. Transfer to a plate. Saute onion and garlic for 3 minutes. Add sauce and seasonings to skillet. Simmer for 3 minutes.
Arrange spaghetti on bottom of a greased baking dish. Layer the vegetables on top, then the chicken, then the skillet mixture. Sprinkle with cheese and bake, uncovered, for 40-50 minutes or until bubbling and cooked through. Serves: 4 to 6
