3 Portabella mushroom caps, cleaned and remove stems
3 oz olive oil
1 1/4 cup walnut pieces
8 tsp sugar
1 medium red onion
1/3 cup butter
1/3 cup olive oil
1/4 lb gorgonzola cheese

Coat mushroom caps with 3 oz of olive oil and set aside, Toast walnut pieces in dry saute pan for 10 minutes or until browned. Remove from pan. Add a small amount of water to just dampen walnuts Add 4tspof sugar to walnuts, toss and set aside.

Slice red onion into 1/4 inch rings. Separate rings, dampen with water and sprinkle with remaining sugar. In saute pan add butter and olive oil. Add onion rings and heat until caramelized. Next add walnuts and cook for 10 minutes. Put mushroom caps in a foil tent and cook for 5 minutes on each side. Remove from grill, retain foil tent. With mushroom caps, stem side up, top with onion and walnut mixture, top with gorgonzola cheese. Return to grill. Replace tent and cook until cheese is melted (approx. 2 minutes.) serve while hot,
