3-4 lbs russet potatoes, peeled and cut in half
3/4 cup whole milk
3/4 cup shredded Gouda cheese
1/4 cup chives or green onions, chopped
Salt and pepper, to taste

Boil potatoes until fork tender. Crain and return to pot. Mash and slowly add milk, continuing to mash until smooth and creamy. Add cheese and chives and mix thoroughly. Season with salt and pepper. Serve immediately. Serves 6
