4 cups cubed red skin potatoes
2 heaping tbsp horseradish
1/2 cup softened butter
1 tsp salt
Pepper, to taste
1 cup shredded gouda cheese (this is good with smoked gouda also)

Boil potatoes until very soft and drain off water. Add butter, salt and pepper. Whip until butter melts. Whip in remaining ingredients. Adjust seasoning.
