3 eggs
1 cup vegetable oil and packed brown sugar
1/2 cup sugar
1 tsp vanilla extract
2 cups finely grated zucchini
3 cups flour
1 tsp baking soda
1/4 tsp baking powder
2 tsp cinnamon
1 tsp salt
1/2 cup chopped nuts

Preheat oven to 325. Beat eggs in a large mixing bowl and add next 4 ingredients; mix well. In a separate bowl, combine dry ingredients and gently combine egg mixture with dry ingredients. Add nuts and divide into 2 loaf pans, coated with cooking spray. Bake for 1 hour. Remove from oven and let cool in pans for 1/2 hours before removing bread from pans and serve. Refrigerate leftovers. Makes 2 loaves
