1 cup quick cook oatmeal
1/2 cup sugar
2 bananas, mashed
1 cup flour
1/2 tsp baking soda and salt
1/2 cup butterscotch chips, chopped or mini chips
1 egg, beaten
1/4 cup milk and vegetable oil
1 tsp vanilla extract
Preheat oven to 400. Spray muffin pan with cooking spray. In a food processor, puree oatmeal and sugar until fine; place in a mixing bowl with remaining dry ingredients. In another bowl, combine wet ingredients with bananas and add mixture to dry bow, stirring just until blended. Fill pan 2/3rds full. Bake for 13-15 minutes or until top springs back when lightly touched.
