3 cups flour, plus more for kneading
1 tbsp sugar
2 1/2 tsp baking powder
1 1/4 tsp salt
1/2 tsp baking soda
1/2 cup butter, chilled and cubed
1 cup dark beer
1 cup shredded sharp cheddar cheese
2/3 cup canned fried onions
Pinch cayenne pepper
Melted butter for brushing

Preheat oven to 400. Lightly grease a baking sheet. In a food processor, mix dry ingredients and pulse the butter into the mixture until it resembles coarse meal. Add the remaining ingredients and pulse just until the dough begins to form.

Turn to dough out onto a lightly floured surface and knead it gently, just enough to form a ball. Pat the dough into a 1/2 inch round. Cut the dough into rounds and place onto prepared baking sheet. Lightly brush the tops of the biscuits with melted butter. Bake until the biscuits are gold and firm, about 25-30 minutes. Serve warm.
