1 cup chopped yellow onion
1 tbsp olive oil
3/4 lb Italian sausage, removed from casing
2 tsp finely chopped garlic
1/2 to 2 tsp crushed red pepper
1 (28 oz) can diced tomatoes in juice
1 cup large pitted black olives
1/4 cup tomatoe pasta
1 dried bay leaf
1 tsp dried basil leaves
1/2 tsp dried rosemary and oregano leaves
1 lb farfalle, fusilli, penne or other pasta shape, cooked al dente
Finely shredded fresh parmesan or romano cheese

While pasta is cooking, in a saucepan, cook onion in olive oil until soft, stirring occasionally. Add sausage and cooking and crumbling in pan. Add garlic and crushed red pepper. Increase heat to medium-high; stir and cook until sausage is brown. Stir in tomatoes with liquid, olives, tomato paste and herbs. Bring to a boil, cover, reduce heat and simmer gently for 15-20 minutes. Drain pasta and turn into a serving bowl and toss with sauce. Top with cheese. Serves 4-6
