1 medium onion, chopped
4 cups cooked rice
1/2 to 3/4 cup Monterey jack and sharp cheddar cheeses
1 cup ricotta cheese or sour cream
1-2 (4 oz) can chopped mild green chilies
1/4 cup minced cilantro
1/2 tsp ground cumin and chili powder
Salt and pepper, to taste

Combine ingredients and place in a casserole dish lightly sprayed with nonstick cooking spray. Bake, uncovered, at 350 for 30-35 minutes or until top is golden brown and bubbly.
