1/3 cup plus 2 tbsp apple cider
1/3 cup apple jelly
1 tbsp balsamic vinegar
1 tsp dried thyme
1/4 cup butter
1 (12 to 14 lb) turkey
Salt and pepper, to taste
1 bunch fresh sage
1 onion, cut into wedges
2 small carrots
2 celery stalks
4 large apples, cored and cut into wedges

In a saucepan, stir together 1/3 cup cider, jelly an buter until mixture is melted and smooth. Remove from heat. Rub turkey inside and out with 2 tbsp cider; sprinkle with salt and pepper. Gently loosen skin over entire turkey breast. Slice as many sage leaves as you want under the skin and place skin back into place. Stuff neck and body cavites of turkey with apple wedges, onion wedges, carrots, celery and sage leaves. Close cavities with skewers. Truss turkey; brush with cider mixture. Roast according to weight.
