4-6 large salmon fillets
Peanut oil

Sauce
1/4 cup red wine vinegar
1 tbsp peanut or safflower oil
1 tbsp packed brown sugar
1 clove garlic, minced to a paste
1 tsp hot sauce, to taste
1 tsp salt, or more to taste
Pepper, to taste

Oak chips, soaked in water at least 1 hour before adding to grill

Rub skin side of salmon with oil. Whisk together remaining ingredients and spread over the flesh side of the fish. Refrigerate at leat 1 hour or overnight.

Heat coals until covered with white ashes. Add soaked oak chips to make smoke when ready to cook the fish. Add fish to grill and cover to let smoke around the fish. Cook until it just barely flakes, no more than 5 minutes, depending on the thickness. Serves 4-6
