2 lb pepperjack cheese
2 cups half-and-half
1 large tomato, diced
1 onion, diced
1/2 cup diced red bell pepper
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
Over a double boiler, slowly melt cheese. Whisk in half-and-half until smooth and creamy. Stir in remaining ingredients. Transfer to a serving bowl. Serve warm with tortilla chips or bread.
