1 (6 oz) pkg wild and white rice mix, uncooked
2 1/3 cups water
1 (4 oz) can mushrooms, drained
1 (14 oz) can artichoke hearts, quartered, drained
2 to 3 tbsp chopped roasted red pepper or pimiento
2 cups cooked turkey, cubed
1 cup shredded Swiss cheese

In 2-quart baking dish, combine rice with seasoning packet, water, mushrooms, artichokes, pimiento and turkey. Cover with foil or lid and bake at 350 for 1 hour and 15 minutes, or until liquid is absorbed. Top casserole with cheese and bake, uncovered, for about 5 to 10 minutes or until cheese is melted and nicely browned. Serves 6.
