CHINESE-STYLE BARBECUED PORK TENDERLOIN

Chinese-style Barbecued Sauce, recipe follows

Marinade
1/2 cu soy sauce
2 1/2 tbsp sesame oil
1 1/2 tbsp minced garlic
2 tsp fresh lime juice and rice wine vinegar
1 1/2 tsp ground ginger
1/2 tsp sugar

3 lbs well-trimmed pork tenderloin

Combine marinade ingredients in a bowl. Place tenderloin in a resealable bag and pour the marinade over it, turning to coat well. Cover and refrigerate approximately 3 hours to marinate, turning every hour.

Prepare grill for medium-hot coals. Grill tenderloin, turning occasionally, until cooked through, about 45 minutes to 1 hour. Let stand at least 10 minutes before slicing. Slice thinly on the diagonal, arrange the slices on a platter. Brush with sauce over meat and serve. Serve extra sauce on the side.

Chinese-style Barbecued Sauce
3/4 cup prepared barbecue sauce
2 tbsp soy sauce
1 tbsp peanut oil and rice wine vinegar
1/2 tsp ground ginger and minced garlic

Combine ingredients in a saucepan. Simmer gently for 5 minutes. Remove from heat and cool to room temperature. Make a double batch and store in the refrigerator up to 3 weeks.
