1 tbsp butter and flour
1 cuphalf-and-half
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 cup grated Swiss cheese

Melt butter in a saucepan. Whisk in flour and cook 5 minutes, stirring frequently. Stir in half-and-half. Simmer for 15 minutes. Stir in spinach. Place in a small casserole dish. Top with cheese and place under broiler until lightly browned. Serve immediately. Serves 4
