1 tbsp olive oil
1 cup chopped green or red bell pepper
3/4 cup chopped onion and finely chopped carrot
1 (8 oz) pkg sliced fresh mushrooms
1 (2 3/4 oz) pkg instant wile rice, uncooked
1 1/3 cups chicken broth
1/4 tsp black pepper
Heat oil in a saucepan and saute next 4 ingredients. Add rice and broth and bring to a boil; reduce heat, and simmer, uncovered, 5 minutes or until liquid is absorbed. Stir in papper and let stand 5 minutes. Serves 4
