2 lbs spinach, stems removed and cleaned
1 clove garlic, minced
8 eggs
2 oz grated parmesan or Swiss cheese
Salt and pepper, to taste
2 tbsp olive oil

Preheat oven to 300. Put in a saucepan, cover and cook until wilted, about 2 minutes. Drain and squeeze the spinach dry and mince. Beat eggs in a bowl with cheese, salt and pepper. Stir in the spinach and garlic into the egg mixture. Oil a casserole dish and fill with the mixture. Bake for 1 hour.
