ITALIAN STYLE TURKEY CUTLETS

4 fresh turkey breast cutlets
1/4 cup milk
1 tbsp Dijon-style mustard
1/4 cup seasoned dried bread crumbs
3 tbsp vegetable oil
1 clove garlic, minced
8 oz fresh spinach, stemmed and coarsely chopped, about 4 cups
2 large fresh tomatoes, cored and cut into 3/4 inch chunks
1/4 tsp salt and pepper
1/4 cup coarsely grated mozzarella cheese

Place cutlets between plastic wrap; pounded to 1/4 inch thickness.

In a small bowl, stir milk and mustard; spread bread in a pie plate. Dip cutlets into milk mixture and coat with crumbs.

In a skillet, heat 2 tbsp oil; add cults and cook 4-5 minutes on each side until golden. Remove from heat and arrange cutlets in a heatproof platter and keep warm.

Heat broiler. Wipe out skillet; add remaining oil and heat. Add garlic, cook 2-3 minutes, stirring until golden. Add next 4 ingredients and cook 2-3 minutes or until spinach is wilted.

To serve: Sprinkle turkey with cheese and place under broiler, 4 inches from heat source, about 30 seconds. Serve with over spinach mixture. Serves 4
