1 (8 oz) bottle Italian salad dressing
2 lbs mushrooms
Grated peel of 1/2 lemon
Juice of 1 lemon
2 tbsp sliced pimientos and chopped parsley
Salt and pepper, to taste
In a saucepan, combine dressing and mushrooms; bring to a boil. Cook, uncovered, 2-3 minutes, stirring constantly. Add remaining ingredients except parsley and chill 4 hours or more. Drain; reserve dressing. Stir in parsley. Serve as an appetizer with toothpicks.
