FRIED RICE WITH CHICKEN – Easy

2 tbsp vegetable oil
1 cup chopped bok choy or cabbage
1 cup snow peas
1/4 cup sliced green onions
1 clove garlic, minced
1 lb boneless, skinless chicken breasts, cut into strips
1 pkg dry onion-mushroom soup mix
3/4 cup water
1 tbsp soy sauce
1/8 tsp pepper
2 cups cooked rice

Heat 1 tbsp oil in a skillet over medium heat. Add vegetables and garlic. Stir-fry for 3 minutes or until crisp-tender. Remove vegetables and add remaining 1 tbsp oil. Add chicken and fry for 3 minutes. Blend next 4 ingredients and stir into skillet. Add vegetables and rice and heat through until liquid is absorbed. Add chicken to warm. Serve.
