3 tbsp vegetable oil
1 lb boneless, skinless chicken breasts, cut into bite-size pieces
3 1/2 cups chilled, cooked rice
1-2 tbsp garlic powder
3 green onions, sliced
1 stalk celery, diagonally sliced
1 small carrot, shredded
1-2 tbsp soy sauce
1/8 tsp pepper

Heat oil in a skillet or wok over medium high heat. Add chicken and cook, stirring until heated through. Add remaining ingredients and cooked until heated through.
