2 lbs ground beef, chili grind
1 lb Italian sausage
12 oz Mexican chorizo sausage
1 (16 oz) can tomato sauce
1 (12 oz) can beer
2-4 tbsp chili powder
4 clove garlic, minced
1 tsp pepper
1-3 tsp oregano
1 tbsp cumin powder and salt
2 tbsp chopped bell pepper
2 jalapeno peppers, chopped
1 tbsp finely chopped green onions

Brown the meats in a Dutch oven, stirring occasionally to mix. Once meat has browned, add the remaining ingredients. Cook over low-medium heat for 30 minutes, stirring occasionally, to prevent sticking, then reduce heat to low and cover. Cook, covered for 1 hour, stirring occasionally. Taste for additional seasoning. And cook an additional hour, stirring occasionally. Serve over rice or pinto beans.
